Moroccan Hash

Traditional Moroccan pressed hash — the kind that's been made the same way for generations in the Rif. The resin is collected by hand, then warmed and pressed into slabs. Light golden-brown on the outside with a slightly darker marbled interior, the texture is soft and pliable rather than hard or brittle.

The bar should give a little under your thumb and crumble cleanly when you break it. If it cracks like hard cheese or shatters into dust, it's been pressed or stored wrong — ours doesn't.

Sweet and earthy on the nose with a warm spice underneath — closer to tobacco, cedar and a touch of dark honey than the sharp citrus you get from flower. There's a quiet, almost leathery quality to the smell that comes from the way it's pressed and aged.

On the hit it's smooth and full-bodied rather than sharp, and it comes on slower than smoking flower. Give it a few minutes before you decide you need more. The finish is warm, settling and long — this is an evening and end-of-day smoke rather than a get-up-and-go one.

It cuts clean and crumbles easily, so it works however you like to consume. Rolled into a joint with a little flower it burns even and slow and stretches a session out further than you'd expect. Crumbled onto a bowl it keeps going well past what you'd get from a small bowl of flower alone.

Because it's pressed rather than sieved fine, it's forgiving — easy to handle, easy to portion, doesn't fall apart in your fingers the way dry bubble hash can. A gram of pressed hash will go further than a gram of dry-sieve, just by virtue of staying together on the spoon.

Keep it sealed and somewhere cool and dark. Pressed hash doesn't like heat — too warm and it softens and starts to sweat; too dry and it hardens and loses the pliability that makes it nice to work with. A sealed jar in a cupboard is fine. In the fridge is better if you're keeping it a while, as long as it's properly sealed and you let it come back to room temperature before you open it, otherwise moisture can settle on the surface and make it tacky.

Stored well, a 1kg bar keeps its texture and character for a long time — months, easily, with no real change.
